1.Add all ingredients except the red wine to a shaker tin without ice.
2.Dry shake to emulsify the egg white.
3.Add ice and shake again.
4.Strain into a coupe glass.
5.Top with red wine.
6.To create a red wine float, pour the red wine over the back of a spoon and let it settle.
