1.In cocktail shaker, muddle raspberries and thyme.
2.Add gin, egg white, simple syrup, and lemon juice.
3.Shake until mixture no longer sounds sloshy and you feel a lot of pressure.
4.Add ice to fill shaker half full.
5.Shake until well chilled.
6.Strain into a coupe and dust top with cinnamon and garnish with lemon and thyme.
